About this plant

The root and leaf of Taraxacum officinale contain taraxacin, a bitter sesquiterpene lactone that stimulates digestive secretions, and up to 40% inulin in autumn roots. Central to the Scandinavian vårkur, the annual spring detoxification ritual. After winters of preserved foods, dandelion greens were the first fresh plants consumed.
