About this plant
The seeds of Coffea arabica contain caffeine, a purine alkaloid that blocks adenosine receptors, and chlorogenic acid, the predominant phenolic antioxidant. Trigonelline decomposes during roasting to form niacin. Originated in the highland forests of Ethiopia. The earliest written record appears in the 9th century by Persian physician Rhazes. Named by Linnaeus in 1753.
